MIXED FRUIT MUFFINS (Nina)

 
 
Had an early start yesterday morning. Very determined to finish ironing the whole 4 basketful of clothes and wallah...mission accomplished. There's just a few clothes left to be ironed from the last washing. Will let it pile up a bit, then I'll get to date Miss Salton (my iron) again. Felt much better after all that exercise. Anyway, if you want more excercise especially for backaches, come let's do more exercise....












Since we've burn some fat with that excercise....as if!!!!! wakakaka...let's get on to the recipe for today. And oh...there'll be another two entries (insyaAllah) about my trip to Mangochi. Just feel like sharing with all of you the beauty of Malawi Lake. For the time being, I'd like to post what I've tried last 16th November. I came across this Mixed Fruit Muffin at Nina's fotopage and decided to give it a go. Out of this recipe, I managed to get about 7 muffins. Thank you Nina for sharing this recipe with us...



MIXED FRUIT MUFFIN

Ingredients :


130 g flour
(I used cake flour)
1/4 teaspoon bicarbonate soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon powder
70 g castor sugar
1 egg
50 g butter
(I used margarine)
70 - 80 ml fresh milk
30 g fresh blueberries }
30 g blueberries (in pack) } I omit both and instead I added dried mix fruit

Method :

1. Preheat oven at 180 C (for big ovens and 160 C for a small oven).
2. Line the muffin tray with papercups.
3. Sift flour, bicarbonate soda, baking powder, salt, sugar and cinnamon powder. Set aside.
4. Melt butter on low heat.
5. Add egg, milk and melted butter into the sifted ingredients and stir, just to mix. Do not overmix!
6. Add in the mixed fruit and stir to mix.
7. Scoop a bit of the mixture into the prepared tin and bake till done.
(Not so sure of the time but maybe around 20 - 25 minutes)

p/s : Haaa kan dah kata...mak Mursyid memang ada hati nak main gelongsor tuuuu...nak teman Mursyid! Wakakakaka.....Tu la kan, kita kecik kecik dulu manalah ada gelongsor terowong yang berkona kona tu...yang ada sekeping papan...jaaaaadilah, alhamdulillah.....
