Had a very busy day today. Was hit by the good bug! Just can't stop cooking and baking since morning. Finally had to stop after Maghrib because the school uniforms need to be ironed for tomorrow. Today only, I tried three new recipes. But I won't put it here today as I am feeling very very sleepy at the moment but because the spirit of sharing is strong in me, I'll paste something else that I've tried a few days back.

My sister had asked for Tiramisu recipe. So I tried Kak Liza's version of Tiramisu. It has this soury taste because of the yogurt. This is my first time ever to taste tiramisu. So I wasn't too sure, how is this Tiramisu supposed to taste like. When I asked Naseem, she said her Tiramisu is sweet. So...wallahualam...Anyway, thanks Kak Liza for sharing the recipe with us....



TIRAMISU

Ingredients A:

24 pieces Tiramisu biscuit
250 g Philadelphia cream cheese
150 ml natural yogurt
1/2 cup castor sugar
1/2 cup water + 1 teaspoon Nescafe ~ dissolve
cocoa powder

Ingredients B:

150 ml water
1 tablespoon jelly powder/chinese grass (serbuk agar-agar)

~ Mix both the ingredients and let boil.

Method :

1. Arrange 12 pieces Tiramisu biscuit in a tray.
2. Drizzle half the Nescafe mixture on top of the biscuit.
3. Beat cream cheese and sugar till fluffy.
4. Add in yougurt and continue beating till well mixed.
5. Pour in the B ingredient and stir well.
6. Spread half the mixture on top of the arranged biscuit.
7. On top of the mixture, arrange another 12 pieces of Tiramisu biscuit and spread the cheese mixture.
8. Sift some cocoa powder on top of the Tiramisu.
9. Chill for a few hours before serving.

Note:
1. I used Boudoir biscuit.
2. For those residing in Malawi, I would not suggest you to use the natural yogurt from Dairiboard because the taste is just too sour. Clover Vanilla yougurt would be a better choice.
3. Instead of Nescafe, I used Ricoffy.

Didn't update the page yesterday because I wasn't in the mood for updating, but that does not mean I didn't log in to my page. Yesterday, I was into MIDI search, and if I'm not mistaken, I've changed the song on my page for 4 times in 3 hours time. Hahaha...each time I came across a MIDI webpage, the songs are getting better and better which makes me difficult to decide which one must I choose...Finally I settled down for Dealova...and that was because, I was so sleepy and I need to go to bed! Otherwise.......

So here's the back dated report...On Friday, these were what we had for lunch......


And this morning...err...not THAT morning I must say, it was past 10, we had these plus the recipe for the day, for breakfast. I got this recipe from Puan Zainab, a Malaysian friend whom I got to know when we were together in Sri Lanka. And she got it from Puan Hasnah, also met in Sri Lanka. Thanks to both my friends for sharing this recipe with me so that I can share it with all of you....



And here's the recipe for the day....



PUTERI AYU

Ingredients :

180 g sugar
250 g flour
1/2 tablespoon ovalette
3 eggs
1 glass screwpine juice
green coloring
fresh grated coconut + salt to taste

Method :

1. Beat egg and sugar till white and fluffy.
2. Add in ovalette and continue beating.
3. Fold in flour.
4. Pour in the screwpine juice.
5. Press a bit of coconut onto the base of the mould.
6. Pour the mixture on top.
7. Steam for 10 - 20 minutes.
8. This recipe yields 30 pieces.

Note :
1. Actually when I made this today, it didn't turn out as fluffly as I did the first time. Not sure what went wrong. But the taste is there and the texture is still soft and spongy.
2. I didn't use screwpine juice. Instead, I mix the water with vanilla essance.
3. And as you can see, I used 3 colors, red, yellow and green.

The 250g of flour in the Putri Ayu recipe is that rice flour? I do not have ovalette in the United States, can I substitute it with baking soda? By the way, do you know how to make another version of this kuih, which is called Putu Piring or Kuih tutu? Please advice if you have the recipe. Thank you...Elizabeth.

KROKET SINGKONG (Mummy Jam)

Yesterday night, like I've said, Fatin wanted pizza pinwheels and Syahmi wanted burger. Daddy, at first, wanted to eat rice, but then changed his mind to just Milo with biscuits...thanks dad...your menu is the simplest. So I set to work. Firstly, prepared the dough, then started cooking the sauce and at the same time frying Syahmi's burger. Hubby came in the kitchen to find me 'flying' in the kitchen! Hahaha...I think, that's why he changed his mind to just Milo and biscuits! Anyway, all the food was gobbled up nicely and happily by my satisfied customers aka my family....Speaking of pizza pinwheels, I am very happy to see how Fatin ate them. It's like "now you see it, now you don't". Though yesterday she was really really tired and sleepy due to (1) lack of sleep the previous night, finishing homework and (2) went mountain climbing for after school activity, she surely had a big appetite for what she had ordered. And the funny thing was, she ate with an almost closed eyes! Poor thing!



When I prepared the dough, I thought of trying something else out of that dough. So I kept aside a bit of the dough. And this was what I arrived at. Thanks to Hood for giving me the idea...and guess what...the kids want them for dinner tonight. So after posting this, off I go flying in the kitchen again I guess....hahaha....



For today's recipe, I'd like to share with you a recipe that I got from Mummy Jam's fotopage. Made these sometime back when I finally got hold of the tapioca. It's called Kroket Singkong. According to Mummy Jam, Singkong is an Indonesian word for tapioca. Thanks Mummy Jam dear for this recipe...It's lovely...



KROKET SINGKONG

Ingredients :
For the skin


1/2 kg tapioca ~ boiled with a bit of salt till soften, then mash

bread crumbs
egg
oil for frying

For the filling :

2 onions ~ diced
1 shallot ~ chopped
200 g minced meat
1 tablespoon curry powder
mixed vegetable
chopped spring onion
white pepper
salt

Method :

1. Prepare the filling like how you prepare the curry puffs filling.
2. Take a small portion of the mashed tapioca, flatten it and place the filling in the middle.
3. Cover the filling and shape it to oval. If the mashed tapioca is a bit dry, you may add a bit of water to moisten it.
4. Whisk the egg. Dip each kroket in egg and coat with the breadcrumbs.
5. Deep fry till golden brown.

MAKARONI AYAM KUAH TOMATO & MI HAILAM KAK LEEN

Makaroni Ayam Kuah Tomato

Was like a zombie the whole day today. Lack of sleep. Hehehe...anyway, made it through the day. Alhamdulillah everything went well, including the meeting with Mr Barrett, Syahmi's teacher at Hillview School. Had a lovely time meeting friends after quite sometime...But can't stay long to mingle as I have to rush to fetch Fatin from her Mountain Climbing activity.

This morning when I browsed through Kak Rossya's fotopage, I just can't resist the Makaroni Ayam Kuah Tomato, translation...Macaroni with Chicken in Tomato Soup. Printed the recipe and off to the kitchen....And this is my version of her Macaroni with Chicken in Tomato Soup....yummy delicious, especially for those who love sour stuffs....Thanks a bunch Kak Rossya for always providing us with yummy delicious and simple dishes...



MACARONI WITH CHICKEN IN TOMATO SOUP

Ingredients :

1 kg chicken fillet ~ cubed
4 medium ripe tomatoes ~ diced and blended
2 garlic ~ blended
1/2 tablespoon white pepper
1 tablespoon margarine
6 tablespoons tomato puree
800 ml water
1 medium carrot ~ diced
50 g peas
juice from 1 lemon
salt to taste
sugar ~ if prefered
500 g macaroni ~ boil with water and a tablespoon of oil to avoid it from sticking together

Method :

1. Mix chicken cubes with white pepper, blended tomato and garlic.
2. Heat margarine and put in the mixed chicken. Stir.
3. Add in tomato puree, water, carrots and peas.
4. Let it boil then add the lemon juice, salt and sugar.
5. Leave to simmer till the meat is tender and the carrots soften.
6. To serve : Place macaroni in a serving bowl and pour the soup on top.


Another recipe that I'd like to share with all of you today is another version of Mi Hailam. I got this recipe from Kak Leen's fotopage. It's easy to prepare and yet very tasty. Made this a couple of times already. Thank you Kak Leen for sharing this recipe with all of us....


MI HAILAM

Ingredients :

1 kg fresh noodles
500 g chicken fillet ~ sliced
10 fishballs
5 pieces fish cakes
250 g prawns
Chinese cabbage or any green leaves vegetable
1 carrot
100 g cauliflower
1/2 cup oyster sauce
6 garlics ~ pounded
6 bird eye chillie ~ pounded
10 black peppercorns
1/4 cup thick soya sauce
1/4 cup tomato sauce
3 tablespoons cornflour ~ mixed with a bit of water
salt to taste

Method :

1. Blanch the fresh noodles and keep aside.
2. Heat oil in the wok and add in the pounded garlic and bird eye chillie. Stir till fragrant.
3. Add in the prawns, chicken fillet, fish balls, fish cake and enough water. Let it boil.
4. Add in the oyster sauce, thick soya sauce, tomato sauce and the cornflour mixture.
5. When boiling, add in the vegetables and cook till the vegetables soften.
6. To serve : Place noodles in a serving plate and pour the gravy on top. Garnish with spring onion and crispy fried onion.

Note :
When cooking this noodles, I just put in whatever's available in the fridge and freezer.

CHELSEA BUNS

Since now the kids had started schooling again, so mama's duties start very early in the morning...perparing breakboxes for them. For breakfast, they normally go for cereal. Phew....that's a relief....Since Syahmi has to stay back for hockey practise today, I packed his lunch as well. Today's breakbox consists of Chocolate Mini Muffins, Polony Sandwich, a packet of crisp and two energy sweets as the kids called it and a bottle of plain water. Just managed to snap the photo of the muffins and mom and dad had that for breakfast over a cup of coffee....alhamdulillah....

When we reached home from school around 4.30pm, I went straight to the kitchen. Had been wanting to try out this cheese cake for quite sometime...finally, I made it today...wished I had made it earlier on! It's delicious. Which cheese cake mama...ah ahhhh...not telling now...will post it later...hehehe...as if anybody cares eh?. And guess what people...I MADE CROISSONTS today...and it came out just like CROISSONTS and not something else! Hihihi....Once I tried making croissonts at Haleema's house, but I guess the yeast was bad, and it didn't come out good. From that day, I always think that I am not able to do croissont. But today, I proved myself wrong! I CAN DO CROISSONTS...la poyonyer!. Anyway, since the look of the croissont is not so presentable though the taste is simply lovely, I'll try and bake them again soon and hopefully I'll paste the step by step photos as well...so be patience people....

For today's entry, I'll just paste this Chelsea Buns recipe that I got from a South African magazine called Woman's Value. August 2006 issue and the recipe is on page 59. Well, actually it's a Huletts Sugalite promotion page, and this recipe comes under 'Baking for Diabetics'. But since I don't have any Huletts Sugalite, I just used white sugar and for the filling, I actually used Kak Rossya's. Cilok jangan tak cilokkkk.... Thanks kak....



CHELSEA BUNS

Ingredients :

210 ml fat-free milk
(I used full cream milk)
60 ml low-fat margarine (I used Buttercup margarine)
445 g white bread flour (I used cake flour)
65 ml Huletts Sugalite (I used 1/4 cup sugar)
7 g instant dried yeast (1 g is approximately 1/4 teaspoon)
1 large egg ~ lightly beaten

Filling :

5 ml ground mixed spice
5 ml ground cinnamon
65 ml (half a sachet) Huletts Sugarlite
50 g raisins
50 g chopped dried apricots

Glaze :

125 ml Huletts Sugalite

Method :

1. Heat the milk and margarine until just melted. Set aside to cool until lukewarm.
2. Mix the flour, Sugalite, yeast and a pinch of salt in a large mixing bowl. Stir in the lukewarm milk and the egg. Knead for 10 minutes then cover and set aside in a warm area to double in size. Knead the dough again, then roll out to form a 40 x 22cm rectangle.
3. Filling Sprinkle the dough with the filling ingredients, then roll up like a Swiss roll. Cut into nine slices. Place the slices into a 20cm square baking tin and allow to rise again until doubled in size. Bake in a preheated oven (190C) for 30 minutes or until golden and cooked through.
4. Glaze Mix the Sugalite with 60ml water. Simmer in a saucepan for five minutes or until it starts to thicken slightly. Pour over the hot Chelsea buns when they come out of the oven.

Note :

1. For the glaze, I spread some golden syrup.
2. Kak Rossya's filling:

4 tbsp butter, softened
2tsp ground cinnamon
50g soft brown sugar
50g currants

To make the filling, cream the butter, cinnamon and brown sugar together in a bowl until the mixture is light and fluffy. Spread the filling over the dough, leaving 2.5cm border around the edges. Sprinkle over the currants.

PULUT KUNING & RENDANG TOK

Pulut Kuning
Rendang Tok
Was fasting today, just for sunnat Syaaban...practising for Ramadhan which is just around the corner. And alhamdulillah no Monday Blues for me or whatsoever...Infact the morning went very well. Had all the house work done in good time which gave me more time to browse the net and what must I see and start wishing for??? Pulut Kuning and Rendang Tok from Kak Liza's page. Esh...I guess I must stop visiting that 'house' eh...Hahaha...but how can I??? The food served in there are just mouth watering, delicious, yummy, scrumptious dan yang sewaktu dengannya. And since I've never ever in my life, tried making pulut kuning, so I challenged myself to cook it for breaking fast. And well, I guess I did ok. When Syahmi saw the glutinuos rice that I spread on the banana leaves in the steamer, he said that it looked good and that I should take photo. Wow, that's a VERY good sign to me...Thanks you my darling boy, for boosting my spirit!

While the pulut kuning is on the way, I cooked the Rendang Tok. I didn't put in the dried chillie as my stock is so VERY limited at the moment. Saving it for sambal. So the Rendang tend to look not like rendang Tok. When I saw Kak Liza online, I told her about my not-so-successful attempt and she tried her best to help out. But then again, it's just the color that is a bit different, but taste wise, it's still delicious. So why bother...for me at least...hahaha...I've asked Kak Liza, can I just paste her real Rendang Tok photo on my page...and at the same time, I'll paste my version as well. And she gave me her consent. Thank you Kak Liza...for everything....So, here are the recipes....


PULUT KUNING (Kak Liza)

Ingredients :

1 kg glutinous rice ~ washed
3 pieces dried tamarind (asam keping)
2 tablespoons tumeric powder ~ mix with water and put through strainer
enough water to soak the rice
banana leaves to layer the steamer
3 cups thick coconut milk
salt
sugar

Method :

1. Soak glutinous rice with dried tamarind, tumeric mixture and enough water for 5 hours. Stir once in a while to allow the color to blend well with the rice.
2. Rinse the water through a sieve.
3. Get the steamer ready.
4. Layer the steamer with banana leaves.
5. Spread the glutinous rice on the banana leaves.
6. Steam till the rice is cooked or till you can see the steam coming out from the sides of the cover.
7. Remove the cooked rice from the steamer into a big bowl.
8. Pour the thick coconut milk (mix with salt and sugar) into the bowl. Mix well.
9. Spread the mixed rice back onto the banana leaves in the steamer.
10. Steam till cooked or till you can see the steam coming out from the sides of the cover.


RENDANG TOK (Kak Liza)

Ingredients :

1 kg topside beef ~ cut 3 inches
2 cups thick coconut milk (from 1 coconut)
1/2 cup fried grated coconut (kerisik)
3 tablespoons brown sugar/palm sugar
3 pieces dried tamarind
Tumeric leaves ~ shredded
salt to taste

To be blended to a paste :

2 tablespoons corriander
1 tablespoon fennel (jintan manis
1 tablespoon cummin (jintan putih)
1 tablespoon black peppercorn (lada hitam)
3 star anise (bunga lawang)
3 cloves (bunga cengkin)
25 pieces dried chillie
20 shallots
5 cm ginger
5 stalks lemon grass
3 cm galanggal (lengkuas)

Method :

1. Place all the ingredients except tumeric leaves, kerisik and dried tamarind into a pot.
2. Simmer on slow fire till gravy turns thick.
3. Add in tumeric leaves, kerisik and dried tamarind. Stir to mix well.
4. Cook till the rendang is sort of dry.

KUIH KASWI GANDUM (HANIELIZA)

Kuih Kaswi Gandum
Didn't do anything much last weekend. Was horribly LAZY last Saturday. Oohhh how I hate that...but then, look at the bright side....I need a break sometime huh? I think it's because my system is still trying to adjust again to the school days schedule. Hopefully I'll be 100% tuned by next week....

Anyway, for today's entry, I'll paste the Kuih Kaswi recipe that I got from Kak Liza's page. The taste is not bad, but I think if I were to try it again, I'll add more sugar (maybe the sugar in Malawi is not as sweet as in Malaysia) or maybe I'll just add in the palm sugar for a nicer color. Thank you Kak Liza for sharing with us this recipe...



KUIH KASWI GANDUM (Kak Liza)

Ingredients :

Syrup :
5 cups water
5 tablespoons brown sugar
5 tablespoons white sugar

Boil all the above ingredient and allow to cool.

2 cups flour
1/2 cup tapioca flour or cornflour (I used cornflour)
1 teaspoon edible lime (air kapur)
freshly grated coconut
a pinch of salt

Method :

1. Get the steamer ready.
2. Grease the tray (I used a 6" x 8" tray) with a bit of oil. Then layer it with a piece of plastic. This will make it easier to take out the kuih from the tray.
3. Mix well the syrup with flour, tapioca flour or cornflour and edibe lime. (I pour everything in the blender)
4. Pour it through the strainer and into the tray.
5. Steam for about 30 minutes. Allow to cool before cutting using a plastic knife.
6. Mix the grated coconut with a bit of salt and coat the kuih before serving.

TEPUNG GORENG PISANG

Just had breakfast.....

...and just can't wait to share this new found recipe that I've experimented. It's all because of Kak Rossya's goreng pisang photo that I viewed in her page this morning. I've printed this recipe quite sometime back but just didn't try it out till today. I am not sure where I got the recipe from and I am very sorry I won't be able to acknowledge the owner of the recipe. Whoever you maybe, my sincere thanks to you for sharing this wonderful recipe with us. This is actually a recipe of a batter to coat the banana, sweet potatoes or whatever, for frying.



TEPUNG GORENG PISANG

Ingredients :

1/2 cup self-raising flour
1/4 cup cornflour
1 tablespoon rice flour
1/2 teaspoon baking powder
salt to taste
180 ml water (or less, depends on the flour)
1 1/2 tablespoons oil

Method :

1. Sift self-raising flour, cornflour, rice flour, baking powder and salt.
2. Pour in water till a good consistency batter is formed. Not too thick and not too runny.
3. Add in the cooking oil. Mix well and leave the batter to rest for 10 minutes.
4. Heat oil. Coat the banana or sweet potatoes or yam with the batter and fry till golden brown.

Note :

I added a bit of tumeric powder for the color.

while surfing for pisang goreng (my favorite desert) recipe, i hit on to yr website which is well visited.
can you please advice the different in the many recipes, especially the rice flour and corn flour.
what is the purpose of putting cornflour?
is rice flour alone enough to give the crispyness of the pisang?

All went well today, alhamdulillah. Mama is fine and happy. In the morning, managed to settle all the housework and cooking in good time. And in the evening, phoned my mom and had a long and happy chat with her. I just felt good.......





I'd like to share with you this recipe that I got from Kak Liza's fotopage. Thank you Kak Liza for the wonderful, simple to prepare and easy yet delicious dish. When I showed to Kak Liza, these photos, her comments for the rice, is that I shouldn't have mix the rice with the gravy. What I should have done was just pour the gravy on top of the rice. You only mix the gravy when preparing noodles. As for my noodles, she said, the gravy is a bit too much. Thanks Kak Liza for giving me the post mortem results. InsyaAllah, next time, I'll try to improve. So here's the recipe....



MEE LADNA

Ingredients :

500 g fresh noodles
onion ~ chopped
garlic ~ chopped
100 g prawns ~ shelled, deveined and washed with lemon
100 g squids ~ cut into rings
100 g chicken fillet ~ sliced
snow peas (kacang sepat)
cauliflower
carrot
red and green capsicum ~ sliced
1 teaspoon black pepper ~ crushed
1 egg
enough water
tomato sauce
oyster sauce
oil for cooking

Method :

1. Heat oil in a wok. Add in the chopped onion and garlic. Fry till fragrant.
2. Add in prawns, squids and chicken fillets. Stir well.
3. Pour in water, tomato sauce, oyster sauce and add in carrots.
4. When the gravy started to boil, put in the egg and stir well.
5. Put in the noodles and other vegetables. Mix well.
6. When the vegetables are soften, remove from heat. Pour onto a bowl and sprinkle with spring onions and fried onions.

UDANG MASAK LEMAK CILI API DENGAN KACANG PANJANG (Kuchai)

 
Hi All....just a straight forward update today, as mama can hardly open her eyes right now. Slept for just about 3 1/2 hours yesterday. So an early sleep is the best thing for me right now or tomorrow, I'll be like a zombie! For today's entry, I'll paste this very easy yet delicious dish called Udang masak lemak cili api dengan kacang panjang, translation : Prawn in hot coconut milk with long beans, or something like that. Got this from Kuchai's fotopage. Actually I've tried this recipe a couple of times since she posted it in her page. Thank you Kuchai dear for this simple and yummy recipe....

UDANG MASAK LEMAK CILI API DENGAN KACANG PANJANG (Kuchai)

Ingredients :

Prawns ~ wash with tamarind juice or lemon juice
1 bunch bird eye chillie ~ the amount is up to you actually...
onion
garlic
1 tumeric leave
1 lemon grass ~ bruised
enough coconut milk
long beans ~ cut to 1 inch length
salt
1 anchovies cube

Method :

1. Pound bird eye chillie, onion and garlic.
2. Pour the coconut milk in a pot. Add in the pounded ingredients, lemon grass, tumeric leave and anchovies stock.
3. Simmer on a slow fire and always stir.
4. When boiling, add in the long beans.
5. When the long beans has soften, put in the prawns and add salt to taste.
6. Once the prawn has changed color, remove from heat.

Note :

1. Over here, we can't find long beans. Instead, I used green beans (kacang boncis).
2. I used fresh milk instead of coconut milk. Trying to save my coconut powder to make the Malay kuihs.
