VANILLA MUFFINS

Makes about 2 dozen muffins.
Ingredients :
4 cups flour
2 cups granulated sugar
1 tablespoon plus 2 teaspoons baking powder
1 scant teaspoon salt
2 cups milk
2 large eggs
1 tablespoon vanilla extract
8 tablespoons butter, melted
Method :
In a large bowl, combine the flour, sugar, baking powder, and salt. In a small bowl, whisk together the milk, eggs, melted butter, and vanilla. Pour milk mixture into the dry ingredients; mix all ingredients thoroughly. Spoon into greased or paper lined muffin tins and bake at 400° F for 20 minutes.

KIWI FRUIT MUFFINS

Ingredients :
1 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Dash salt
1 egg
1/2 cup milk
2 tablespoons butter or margarine, melted
2 kiwifruit, peeled and chopped
1/2 cup raisins
Method :
1. In a bowl, combine the dry ingredients.
2. In another bowl, beat the egg, milk and butter. Stir into dry ingredients just until moistened.
3. Fold in kiwi and raisins.
4. Fill paper-lined muffin cups three-fourths full.
5. Bake at 425 degrees F for 15-18 minutes or until a toothpick comes out clean.
6. Cool for 5 minutes before removing from pan to a wire rack.

SANDWICH BREAD (KAK PAH)

SANDWICH BREAD (improvised)

100 g bread flour
120 g water
Method :
1. Bring the water to boil, stir the water so that the temperature is even.
2. Add in the flour. Remove from heat.
3. Keep stirring until a dough is formed. Leave to cool. |
Ingredients :
100 g double cream/fresh milk/ ideal milk (I used fresh milk)
300 g chilled water
2 eggs
12 g salt
* 1 kg bread flour (if you want a whiter bread, use pau flour)
* 8g bread improver (* sift together)
50 g refine sugar
15g dried instant yeast
10 g voltex or soft pro.(I substitute with bread softener)
Boiled dough – (refer the above) shredded
120 g butter or shorterning (for whiter bread, use 60g butter + 60g shortening)
I added : Food coloring - yellow, pink and green
Method (Bread Maker) :
1. Pour the fresh milk, chilled water, eggs and salt into the bread maker pan.
2. Top it with sifted flour and bread improver, sugar, instant yeast, bread softener and shredded boiled dough.
3. Set the bread maker to DOUGH function. Once the dough is just combined, add in butter/shortening and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
4. Remove dough from breadmaker and divide into 3 equal portions. Add one color to each portion. Leave to rest for 15 minutes.
5. Roll each dough to 1 cm thick. Stack the rolled dough on top of each other and roll like the swiss roll.
6. Place in the loaf tin and close the lid, leaving just a bit of opening. Leave to prove till double the size.
7. Bake in a preheated oven at 180 C for 40 minutes. Baking time and oven temperature may differ depending on your oven.
Note :
1. I made 1/2 the recipe. By right, the size of my loaf tin should only fit 1/3 of the recipe.
2. I used all purpose flour in this recipe

BLUEBERRY PANCAKES

Ingredients :
2 large eggs, separated
5 tablespoons milk
100g (4 oz) self raising flour
4 tablespoons caster sugar
pinch salt
100g (4 oz) blueberries (I used blueberry pie filling)
1 tablespoon vegetable oil
Method :
1. Place the egg yolks and milk in a medium bowl and mix thoroughly. Sift over the flour, caster sugar and salt and combine well.
2. Whisk the egg whites in a glass or metallic bowl until they form soft peaks, then fold into the flour mixture gently. Carefully fold in the blueberries.
3. Heat the oil in a frying pan over medium high heat. Drop 2 tablespoons of the mixture into the pan for each pancake, and cook for 2 minutes or until golden brown.
4. Flip and cook for a further minute on the other side.
5. Enjoy!

DURIAN CHIFFON CAKE
Adapted from Nyonya Food's Pandan Chiffon
Ingredients :
Step 1:
8 medium egg yolks
2oz fine sugar
2oz Durian 'Juice' ( I mixed water, Durian essence and yellow food coloring)
3oz corn oil or olive oil ( I used corn oil )
5oz self raising flour
Method:
Beat egg yolk and sugar lightly with a hand whisk till sugar dissolve.
Stir in pandan juice and corn oil.
Fold self raising flour into egg mixture.
Set aside.
Step 2:
Ingredients:
8 egg whites
5 oz fine sugar
pinch of salt
Method:
Beat egg whites till frothy. Slowly add in sugar and pinch of salt while beating at high speed.
Beat until the egg white is stiff and shining but not dry. ( About 3 minutes)
Step 3:
Preheat oven at 175 degrees Celsius.
Use a spatula and gently fold egg yolk mixture into the egg white mixture(meringue).
Pour into an ungreased 25cm tube pan.
Bake for 40-45 minutes.
Once cake is cooked, remove cake from oven immediately and invert pan onto wire rack. Let it cool before removing cake from pan
Note :
I made half the recipe and baked it in an ungreased 18cm tube pan

MUFFIN CHOCOLATE CUSTARD

Ingredients :
(A)
110 ml water
1 1/2 tablespoons cocoa powder
50g brown sugar
25g corn flour
(B)
35g butter
35g cooking oil
1 teaspoon vanilla essence
65g dark cooking chocolate
1 egg
50g castor sugar
75g flour
1 1/2 teaspoons baking powder
Method :
1. Mix all ingredients A in a non stick pot and place it on low heat. Stir to form smooth paste.
2. Remove from heat, add in butter and dark chocolate. Stir.
3. Add in cooking oil, sugar, egg and vanilla essence.
4. Stir well until mixture is well combined. I didn't use mixer, just the wooden spoon.
5. Fold in flour.
6. Spoon the mixture into the muffin tins lined with papercups. Sprinkle with almond slice or any toppings to your liking.
7. Bake in a preheated oven at 180 C for 20 to 25 minutes.

SWEET DINNER ROLLS/LOAFS

Ingredients :
1/2 cup warm water (110 degrees F/45 degrees C)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour
1 (.25 ounce) package active dry yeast
1/4 cup butter, softened
Directions :
Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start.
When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
Bake in preheated oven for 10 to 15 minutes, until golden.
How I prepared my loaves :
I only used the 1/3 cup butter and omit the 1/4 cup butter as mentioned in the recipe above. Let the bread maker do it's job. Once the dough has doubled it's size, I took it out of the Bread Maker and divide the dough into 2 portions. Make into balls and let it rest for 10 minutes. Roll each ball flat, then roll it up like a sandwich. Place in the baking pan and let it prove till double the size. Sprinkle with a bit of water and bake for 20 minutes till golden brown. Once out of the oven, brush with butter. Place on a wire rack to cool. Keep in an airtight container to avoid it becoming hard and dry.
How Fatin prepared her so-called Subway Sandwich...
Cut the bread in half. Arrange some lettuce, then three slices of fresh tomatoes, two pieces of Turkey sliced (grilled slightly), a piece of smoked cheese slice and finally with some lettuce. Enjoy!

CREAMY HOT COCOA

Serving : 4
Ingredients :
1/3 cup unsweetened cocoa powder
1/2 cup white sugar
a pinch of salt
1/3 cup boiling water
3 1/2 cups milk
1/2 teaspoon vanilla essence
enough whipping cream
a bit of cocoa powder to sprinkle (optional)
Method :
1. Combine the cocoa, sugar and pinch of salt in a saucepan.
2. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch.
3. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil!
4. Remove from heat and add vanilla.
5. Divide between 4 mugs.
6. Add the cream to the mugs of cocoa to cool it to drinking temperature. Sprinkle with a bit of cocoa powder.
